Potato tacos are so delicious, and of course, you can fill them with your favorite taco fillers.

Tacos de papa are fried tacos that are filled with mashed potatoes, cheese, and more. It is a popular no meat alternative for Lent. 

What type of tortillas are used to make tacos de papa?

You can use flour tortillas and soft corn tortillas. For this recipe, we used flour tortillas.

What are the ingredients to make Tacos de Papa?

To make potato tacos, you are going to need the following ingredients:

  • Tortillas
  • Potatoes
  • Salt
  • Pepper
  • garlic powder
  • Pickled onions
  • Cotija cheese
  • Oil for deep frying

How to make Tacos de Papa

Now that you have the ingredients, it is time to make the potato tacos. Follow the directions below, and you will be enjoying these delicious meatless tacos soon.

Using a medium pot, fill it with water and place it on the stove. Add the potatoes and heat over medium heat and bring to a boil.

Cook the potatoes until they are tender, use a fork to see how tender they are.

Once your potatoes are tender, carefully drain the water and pat dry the potatoes using a paper towel or towel to remove excess water.

Now its time to use that potato masher that has been sitting there, preventing you from opening your drawer. Use that masher and mashed those potatoes until they are chunky, not smooth.

Once your potatoes are mashed, add the salt and pepper and garlic powder and mix it well.

Grab your tortillas and scoop a generous amount of mashed potato on one side of the tortilla.

Fold the tortilla. Now, I personally used a toothpick to keep the tortilla closed while frying, but it is up to you. My mom does it without, guess she’s cooler than me!

Using a large skillet, heat the oil over medium heat, about 350F.

Carefully, deep fry the tacos. If you are not using toothpicks, make sure you press the corners, so the filling remains inside.

Fried the tacos until they are crispy and golden brown to your liking.

Remove the tacos from the fryer and place them in a paper towel covered plate to soak the oil. Make sure the excess oil is removed from the tacos for the next step.

If you used toothpicks, removed them.

VERY CAREFULLY open the tack and add the quick pickled onions and cotija cheese.

Top the tacos with guacamole, more cheese, and sauce.

Tacos De Papa Recipe

Ingredients

  • 4 flour tortillas
  • 2 Potatoes, washed
  • Salt and pepper to taste
  • 1 Tsp garlic powder
  • Quick pickled onions
  • Cotija cheese
  • Oil for deep frying

Instructions

Fill a pot with water and over medium heat cook the potatoes until fork-tender. Discard the water and pat dry the potatoes.
With the help of a potato masher, mash the potatoes until chunky. Mix with salt and pepper and garlic powder.
Fill each tortilla with a generous scoop of potato paste and fold to close.
Heat the oil in a large skillet over medium heat. Deep fry the taco pressing the corners, so the filling remains inside.
Once the taco is golden brown and crispy, transfer to a plate and pat dry with a paper towel to remove the excess oil.
Carefully open the taco and add some quick pickled onions and cotija cheese.
